Does taste-testing a new chocolate snack bar sound fun? What about trialling the texture of a new tomato sauce for kids?
The sensory characteristics of food are vital. The taste, appearance, aroma, texture, feel and even sound of a food product can have a strong influence on a consumer's perception of quality. If they are disappointed when they first try a new product, they're unlikely to buy it again.
Manufacturers need to test not only new products, but also the impact of changes in formulation on existing products. They might also need to compare or match their product to their competitor's.
You will design and implement sensory tests and analyse the results. You will understand the physiology of the chemical senses and the psychological influences on sensory judgement. You will be using your skills to make products that consumers like and enjoy.
